My Week In Review (otherwise known as WIR) posts are just that: a review of my past week. I post an update here every Tuesday sharing some tidbits of my previous week as well as an accompanying photo recap with selections from my Instagram. Here’s the buzz from my week:
The sun finally came out in Utah last week and we certainly took advantage of the good weather with morning runs (me), afternoon golf (Don), and lots of walks (everyone!). I think my favorite part about visiting Utah is the gorgeous scenery. Those mountains make me catch my breath Every. Single. Time. Spring is in full bloom in the Park City area right now, complete with flowering trees, pansies, tulips, and more! As much as we enjoy spending time outside when we’re at our Utah family vacation home, Don and I do our best to keep up with our work schedules during the week. Don gets up super early for his job and sometimes will take a power nap in the afternoon when his work day is over. Winnie is a big fan of afternoon naps, as well. It may look like little Winnie is keeping careful vigil over her Daddy, but apparently she stepped right on his face to get up on her perch! She is a princess, that’s for sure! While I do love being in Utah regardless of the weather, it was nice to spend some time in the sun during our last few days there.
I’m still cruising along with the Tone It Up #BikiniSeries, an eight week challenge to tone up by the first day of summer. I find that keeping a daily target=”_blank”>food and fitness journal helps me stay on top of my health. I mentioned last week that I’ve been putting in some extra cardio sessions as part of the challenge. I am so excited that I hit the halfway mark towards my #150BySummer mileage goal late last week! I am confident I will reach this goal by the end of the series.
Don and I are still doing our best to eat pretty healthy during the week and allow ourselves to splurge a bit on the weekends. In an effort to mix things up, we started incorporating some of our favorite comfort food treats into healthy meals. For instance, the caesar salad dressing Don makes that he learned from his Mom is neither super healthy nor is it super bad for you. When tossed with lots of fresh romaine, a few croutons, and leftover sautéed shrimp, however, it is transformed into a healthy dinner perfect for a warm spring evening. Instead of eating it as a side with flank steak or spaghetti and meatballs, we turned it into a healthier option by making it the main course. We headed home on Friday so we could make it to our niece’s first birthday party on Saturday. It’s hard to believe Grace is already one! What a cutie pie! Both sides of the family and many friends gathered for the special celebration. The highlight was definitely watching Grace have sugar for the first time. She devoured that chocolate cake with banana filling. Yum! I captured most of it on film for my vlog, which is pretty gosh darn cute (not that I’m biased or anything 😉 ). Unfortunately, I woke up with a nasty stomach virus Sunday morning and was confined to bed for most of the day. Even though I felt rotten, Don and Winnie took very good care of me and kept me company all day. We all watched a Big Bang Theory marathon in bed. Luckily, the worst is behind me and I am well on the way to recovery now.

Even though I was sick on Sunday, I still had a good day thanks to the TLC from my sweet little pack (aka Don and Winnie). I also very much appreciate all of the get well wishes from you guys!
