Three cheers for the return of Cook Nooks! My husband, Don, is a very talented home cook and I know many of you miss him posting his recipes. He’s too busy with work to return to making videos himself, but has agreed to share once again so long as I do all of the “not fun stuff” (his words), as in the editing and all that jazz. I am more than happy to contribute so we can start sharing some of his delicious creations once again. Don made his amazing smoked chicken nachos three times last month for different celebrations at the requests of our loved ones. There was quite a bit of interest online as well when I showed pictures and video clips of this indulgent dish, so we thought it was a great recipe to mark the return of Don’s Cook Nooks!
One of the main ingredients of this recipe is Meathead’s Memphis Dust (MMD), which is one of Don’s favorite rubs. You can find this recipe as well as many others and awesome smoking, grilling, and outdoor cooking tips at Amazing Ribs.
** Don’s exact recipe calls for smoked chicken, and while we realize not everyone has a smoker, Don wanted to share his recipe just as he makes it. That being said, he suggests baking the chicken in the oven if you don’t have access to a smoker. **
