Don’s Cook Nook | Smoked Chicken Nachos

Three cheers for the return of Cook Nooks!  My husband, Don, is a very talented home cook and I know many of you miss him posting his recipes.  He’s too busy with work to return to making videos himself, but has agreed to share once again so long as I do all of the “not fun stuff” (his words), as in the editing and all that jazz.  I am more than happy to contribute so we can start sharing some of his delicious creations once again.  Don made his amazing smoked chicken nachos three times last month for different celebrations at the requests of our loved ones.  There was quite a bit of interest online as well when I showed pictures and video clips of this indulgent dish, so we thought it was a great recipe to mark the return of Don’s Cook Nooks!


One of the main ingredients of this recipe is Meathead’s Memphis Dust (MMD), which is one of Don’s favorite rubs.  You can find this recipe as well as many others and awesome smoking, grilling, and outdoor cooking tips at Amazing Ribs.

** Don’s exact recipe calls for smoked chicken, and while we realize not everyone has a smoker, Don wanted to share his recipe just as he makes it.  That being said, he suggests baking the chicken in the oven if you don’t have access to a smoker. **

    Don – I have a “Cook Nook” video request: Would you be interested in doing a video on your “Smoked Salmon Cuccumber Rounds”? I’ve been an avid lover of smoked salmon ever since I was nine years old when I visited California for the first time and my parents make it twice a year for me – once for my birthday (mid-June) and for Christmas Day, as an appetizer! Ever since I saw the video footage of your mum’s/MIL’s birthday party when those delicious cuccumbers were shown, my mouth was literally watering! They looked so good!

    1. My SIL usually makes those for our family parties. It’s very simp.y. You just slice up cucumbers, add a dollop of sour cream, a bit of smoked salmon, and top with a tiny bit of fresh dill.

They always look amazing in the vlogs. Thanks! I’ve made your Spinach Squares and they were awesome! We dipped them in Ninja Squirrel siracha sauce (found it at Whole Foods). Super yummy!

    Jen, can you tell me what brand dishwasher you have? I remember seeing a clip of Don unloading the dishwasher but I don’t remember the brand. Ours is on its last legs….makes awful grinding noises! Thanks!

    1. I will ask Don about the wing recipe. As for the dishwasher, our is by Miele, and we’ve had it for just over a year or so now I believe. We love it!

      1. Thanks Jen. Miele looks really good. If we were building our “forever home” I would definitely put one in. For now, I think we will settle for a Bosch.

  5. My mother-in-law says that bones add flavor to meat so that’s why the taste difference in boneless vs. bone-in!! My husband loves March Madness so, we will have this for sure!! Thank you for sharing!!!
